How do I change the American flag below my avatar? I used to have a Dutch one, but I don't know what happend, and suddenly I got the US flag. I couldn't find anything in "My Profile".

It's actually under the "Edit Options" section of your User CP. It's the last item at the very bottom.

Speaking of the flag bit, can it be changed so that if you don't select one, it doesn't default to the US flag?

If you select "uriname" where you would normally put in the country of the flag you want, you can go around posting without a flag.
